Happy Baking- Banana Muffins

Yesterdays sunshine has disappeared and we've been left with rain and a generally miserably day, so I thought I would do some baking to make the day slightly less depressing.

We had quite a few bananas that needed to be eaten so I thought Banana Muffins would be the perfect rainy day bake!

They're pretty simple to make and are amazing when they're still warm!

What you'll need to do is...


Makes approximately 12 large Muffins

Ingredients-
2 Eggs
125ml Vegetable Oil
260ml Milk
100g Caster Sugar
100g Soft Brown Sugar
400g Self Raising Flour
Generous pinch of salt
3 Ripe Bananas
Handful of Porridge Oats (Optional)

Method-
1) Preheat your oven to 200C and line a muffin tin with cases.
2) Measure the- eggs, oil, milk and both sugars into a mixing bowl and beat together until the sugar has dissolved. 
3) Mash the bananas in a separate bowl, trying to get rid of as many lumps as you can. Then add to the liquid and sugar mixture above.
4) In another bowl add the flour and salt and mix.
5) Pour the banana mixture on top of the flour and salt and carefully mix together- Be careful not to over mix. As soon as all the ingredients are incorporated and there isn't any dry flour, stop!
6) Spoon the mixture into your muffin cases and sprinkle a few oats over the top of each one. 
7) Bake for approximately 25 minutes- until the tops are golden and a skewer inserted into the centre comes out clean. 
8) Once baked take out of the tin and place on a wire rack to cool before tucking in!
